The idea
What it's about
Kynda offers a plug-and-play fermentation platform for the production of nutritious and flavourful mushroom-based food ingredients. For the first time, we make it possible to bring fermentation from the high-tech niche into the production halls of those low-tech companies for whom fermentation has not been an option until now, mainly because of the investment and expertise required. Our solution is cost-effective, both in terms of investment and operation, and requires no biotechnological qualifications.
In the bioprocess, a low-value side stream from agriculture is upgraded by fermentation with a fungus to a nutrient-rich, versatile food raw material.
The team
Who is behind it
At Kynda, we work together as an interdisciplinary team of 16 employees with expertise in areas such as biotechnology, food technology and engineering.
Kynda was founded in 2019 by our co-founders Daniel MacGowan-von Holstein (CEO) and Franziskus Schnabel (COO). Dr Nina-Katharina Krahe (R&D Manager/CLO) is responsible for research and development. She is supported by our small laboratory team.
Franziska Schummer (CPO) is responsible for product development from the fungal raw materials produced by fermentation.
The entire team is supported by our back office.
Success story
OPTIMIZED fermentation
We have isolated a strain of fungus that does not fall under EU regulations for novel foods.
- It is significantly more efficient than our previous strains.
- It simplifies cleaning of the reactor and downstream processing.
- The harvested 'Kynda meat' can be incorporated into vegan or hybrid products without further processing.
Our optimised fermentation now only takes an incredible 48 hours.
- Our highly efficient process reduces operating costs and increases plant performance enormously.
We have achieved a "zero waste" solution.
- 100% harvest utilisation (liquid and solid), which significantly increases the profit margin.
- We recycle process heat from industrial plants.
